Tips & Tricks
Buy Fresh Chestnuts: It is very important to use FRESH chestnuts for this recipe. Old chestnuts do not taste good and are extremely difficult to peel.
Scoring Chestnuts Before Cooking: You'll need to score telegram in korea chestnuts or cut off the shells before cooking. Scoring will prevent them from exploding from the internal pressure during cooking, and will also make peeling much easier.

How to Peel Roasted Chestnuts
Use a clean kitchen towel to keep them warm so the skins don't shrink on the nuts. You'll need to move quickly and start peeling them as soon as they're cool enough to handle.
Peel off both the peel and the brown papery skin. Start at the “X” mark, and if it’s too hard to handle with your hands, use a knife. The inner skin and peel should come off easily.
